BBQ Tofu Sandwich
Ingredients:
1 block super firm tofu*
BBQ sauce*
Whole wheat or multigrain bread
Olive oil
Sliced pickles*
Cheese, optional
Avocado, optional
Veggies for topping (greens, sliced bell pepper, onion, etc)

Directions:
Slice the block of tofu into ~5 slices to fit on the toast
Press extra water out of the tofu with a clean towel
Marinate tofu slices in BBQ sauce for at least 10 minutes or overnight in the fridge
Bake tofu at 350℉ on parchment paper lined baking sheet, bake for ~20 minutes, flipping ½ way through.
If added veggies, saute them for a couple minutes
Now construct the sandwich for pan toasting: Put thinly sliced cheese and/or avocado on each side piece of bread, add a tofu slice, thin spread of BBQ sauce, pickle slices, and veggies, if using.
Heat pan to medium heat, add a small amount of olive oil for toasting; toast each side until nicely browned and crisp. Remember to add more oil for cooking the other side!
Cut sandwich diagonal and serve with a side of colorful fruits and veggies
Notes:
*The brand WildWood makes a super firm tofu they call “High Protein Tofu”, this is highly recommended.
If you cannot locate this, using extra firm tofu will work. To use extra firm tofu, pat the block dry with a clean towel, then fold another clean and dry towel around the block, place a cast iron skillet or pan with some weight on it (like a can or 2) on top, let the block sit with the weight on it for 20-30 minutes before slicing and marinating. This helps get out the excess water for more firm and flavorful tofu.
