Creamy Pasta Sauce, Vegan

Ingredients:

  • 1 cup cashews, soaked

  • 2.5 cups cauliflower, steamed 

  • 1 can white beans, drained 

  • 2.5-3 Tbsp white miso paste

  • ¼ cup nutritional yeast 

  • 3-4 Tbsp lemon juice

  • 3-4 Tbsp apple cider vinegar 

  • 4 cloves garlic

  • ¼ cup raw onion 

  • Optional: 1-2 tsp rosemary 

  • Water for thinning to desired consistency 

Directions:

  1. Soak cashews for a couple hours, drain water

  2. Cook cauliflower (I steam them) 

  3. Put all ingredients into a food processor and blend until very smooth

  4. Taste, add additional lemon juice/apple cider vinegar, garlic to taste

  5. Thin with water or leave it as a concentrate and thin at time of use (that’s what I do)

  6. Scoop onto pasta and store the rest in the fridge
