Creamy Pasta Sauce, Vegan
Ingredients:
1 cup cashews, soaked
2.5 cups cauliflower, steamed
1 can white beans, drained
2.5-3 Tbsp white miso paste
¼ cup nutritional yeast
3-4 Tbsp lemon juice
3-4 Tbsp apple cider vinegar
4 cloves garlic
¼ cup raw onion
Optional: 1-2 tsp rosemary
Water for thinning to desired consistency
Directions:
Soak cashews for a couple hours, drain water
Cook cauliflower (I steam them)
Put all ingredients into a food processor and blend until very smooth
Taste, add additional lemon juice/apple cider vinegar, garlic to taste
Thin with water or leave it as a concentrate and thin at time of use (that’s what I do)
Scoop onto pasta and store the rest in the fridge
