Orange Tofu Stir Fry
Orange Sauce Ingredients:
1 cup Orange Juice
1/2 cup sugar
2 Tbsp white vinegar
2 Tbsp soy sauce
1 tsp finely chopped fresh ginger*
2 garlic cloves, finely diced*
1/2 teaspoon red chili flakes
1 Tbsp cornstarch
Sauce Directions:
In a medium pot, add orange juice, sugar, vinegar, soy sauce, ginger, garlic, and red chili flakes. Heat for 3 minutes.
In a small bowl, whisk 1 Tablespoon of cornstarch with 2 Tablespoons of water to form a paste. Add to orange sauce and whisk together. Continue to cook for 5 minutes, until the mixture begins to thicken. Once the sauce is thickened, remove from heat and add orange zest, if using.
Stir Fry Meal Ingredients:
Extra or super firm tofu
Brown or black rice
Frozen (or fresh) broccoli
Carrots, peeled and cut into bite-sized rounds
Mushrooms, washed and sliced
Other veggies options (to replace or add to any of the above): frozen or fresh cauliflower, canned bamboo shoots, colorful peppers (sweet or spicy), celery, snow or sugar snap peas
Salt, to taste
Black sesame seeds, optional but highly recommended
Raw peanuts, kept raw or toasted (optional)
Directions:
Tofu: With a clean kitchen towel, press water gently out of tofu block; neatly fold the block with a dry portion of the towel and place a heavy pan (like a cast iron skillet) on top of block to let excess water leak out; let it sit for ~20-25 minutes
After the ~20 minutes, carefully dice into bite-sized cubes
In a medium bowl, gently coat the tofu with sauce and cook on a lightly oiled nonstick pan on medium heat, tossing until tofu is crisp
Rice: Cook rice per package instructions and to yield desired quantity
Veggies: Sautee veggies in wok or large skillet with a small amount of oil, adding some water each time veggies start to stick. Recommended order due to needed cooking time: carrots, cauliflower (if using), broccoli, mushrooms, bamboo shoots (if using)
Alternatively, you can steam all or some of these veggies. I prefer steaming my carrots and broccoli
Once everything is cooked, assemble rice, veggies, tofu, sesame seeds, and peanuts in individual bowls, drizzle with more orange sauce and enjoy!
Notes:
*You can use dried and ground ginger and garlic instead of fresh, just cut the amount in half
*Store leftover sauce in a covered jar in the fridge; it will last several months
