Orange Sauce Ingredients:

  • 1 cup Orange Juice

  • 1/2 cup sugar

  • 2 Tbsp white vinegar

  • 2 Tbsp soy sauce 

  • 1 tsp finely chopped fresh ginger* 

  • 2 garlic cloves, finely diced* 

  • 1/2 teaspoon red chili flakes

  • 1 Tbsp cornstarch

Sauce Directions:

  • In a medium pot, add orange juice, sugar, vinegar, soy sauce, ginger, garlic, and red chili flakes. Heat for 3 minutes.

  • In a small bowl, whisk 1 Tablespoon of cornstarch with 2 Tablespoons of water to form a paste. Add to orange sauce and whisk together. Continue to cook for 5 minutes, until the mixture begins to thicken. Once the sauce is thickened, remove from heat and add orange zest, if using.

Stir Fry Meal Ingredients

  • Extra or super firm tofu

  • Brown or black rice 

  • Frozen (or fresh) broccoli 

  • Carrots, peeled and cut into bite-sized rounds 

  • Mushrooms, washed and sliced 

  • Other veggies options (to replace or add to any of the above): frozen or fresh cauliflower, canned bamboo shoots, colorful peppers (sweet or spicy), celery, snow or sugar snap peas  

  • Salt, to taste

  • Black sesame seeds, optional but highly recommended 

  • Raw peanuts, kept raw or toasted (optional) 

Directions: 

  • Tofu: With a clean kitchen towel, press water gently out of tofu block; neatly fold the block with a dry portion of the towel and place a heavy pan (like a cast iron skillet) on top of block to let excess water leak out; let it sit for ~20-25 minutes 

    • After the ~20 minutes, carefully dice into bite-sized cubes 

    • In a medium bowl, gently coat the tofu with sauce and cook on a lightly oiled nonstick pan on medium heat, tossing until tofu is crisp  

  • Rice: Cook rice per package instructions and to yield desired quantity

  • Veggies: Sautee veggies in wok or large skillet with a small amount of oil, adding some water each time veggies start to stick. Recommended order due to needed cooking time: carrots, cauliflower (if using), broccoli, mushrooms, bamboo shoots (if using) 

    • Alternatively, you can steam all or some of these veggies. I prefer steaming my carrots and broccoli 

  • Once everything is cooked, assemble rice, veggies, tofu, sesame seeds, and peanuts in individual bowls, drizzle with more orange sauce and enjoy! 

 

Notes:

*You can use dried and ground ginger and garlic instead of fresh, just cut the amount in half 

*Store leftover sauce in a covered jar in the fridge; it will last several months
