Cheesy Spinach Toast 

Ingredients

  • Your favorite bread, toasted (I use my whole grain seed sourdough)

  • ~1/2-1 medium carrot per slice of toast, finely chopped

  • 1 Tbsp ground flaxseed per slice of toast

  • 2 big handfuls of fresh spinach* (~2 cups, packed) per slice of toast

  • 1-2 oz cheese per slice of toast (partially skimmed mozzarella or cheddar recommended)

  • Salt and ground black pepper, to taste

Optional (but highly recommended) Mix-ins 

  • 2 garlic cloves per slice of toast, finely chopped

  • ~1 tsp FRESH ginger per slice of toast, finely chopped

  • ½-1 tsp turmeric powder 

  • ~1 Tbsp nutritional yeast

  • 1-2 tsp miso paste, per slice of toast

Directions

  1. Toast your bread 

  2. Finely chop carrot (and garlic and ginger, if using)

  3. Lightly oil a large nonstick pan and sauté the carrots (and ginger/garlic mix, if using) for a couple minutes

  4. Very finely chop fresh spinach, add that + the remaining ingredients into the pan (cheese, ground flaxseed, black pepper, salt, turmeric, and nutritional yeast) 

  5. Stir very well and smash veggies down with a spatula to mash together; only keep on heat until the cheese has melted (<1 minute) 

  6. Once cheese has melted and it all clumps together, spread evenly onto the slice(s) of toast

Notes:

*Frozen, chopped spinach works great too! Use ~1/2-3/4 cup per slice
