Creamy Cashew Spread
This is a multipurpose, put-on-and-with-everything spread. It makes a wonderful spread for sandwiches, toast, and wraps and can be diluted to use as a dip or sauce. It also makes a great snack to enjoy with crackers!
Equipment Needed: A good food processor
Ingredients
~3 cups cauliflower, cooked (1/2 medium head)
1 can (1.5 cups, cooked) white beans
¾ cup cashews
¼ cup tahini
2-4 Tbsp white miso paste
~¼ cup raw apple cider vinegar
~¼ cup lemon juice (or replace with more apple cider vinegar)
Salt, to taste
Directions
Cook the cauliflower (I steam it, but roasting or sautéing it will work too)
Put everything into the food processor and let it run for several minutes
Taste it and add more lemon juice, apple cider vinegar and/or salt, to taste
If needed, add 1-2 Tbsp of water at a time to reach desired consistency, keep blending until very smooth

Ideas for Using This Spread:
Dip for crackers or pita chips
Turn it into a sauce, dressing, or a dipping sauce for sweet potato fries, fritters, or grain bowls; just mix the portion you want with oil and/or water to reach the right consistency
Spread on sandwiches
Topping for toast- add veggies or avocado to the top!
