Makes 1 medium sized pancake 

Ingredients: 

Dry

  • ¼ cup teff flour

  • ½ tsp baking soda

  • 1 tsp cocoa powder

  • ½ tsp cinnamon 

  • Dash of salt 

  • Optional (for higher protein) 1 Tbsp protein powder of choice 

Wet

  • 1 egg OR 1 Tbsp ground flax mixed with 2 Tbsp water

  • ¼ cup milk of choice or yogurt 

  • If using protein powder, add 1-2 extra Tbsp milk or yogurt 

Mix ins

  • Banana slices (~½ for 1 pancake, suggest using the other half on top!) 

  • ~1 Tbsp dark chocolate chips

Directions

  1. Mix wet ingredients well 

  2. In a separate bowl, mix dry ingredients

  3. Combine and add mix ins; add another Tbsp milk or yogurt if needed 

  4. On non stick pan, oil or butter, heat to medium

  5. Put entire mixture and flip once bubbles start to form

  6. Spread with peanut butter and add any other toppings of choice 

Topping Ideas: 

  • Peanut butter (regular or reconstituted powdered peanut butter)  

  • More banana, fresh strawberries or raspberries

  • Syrup or jam 

  • Pecans or walnuts 

Notes: 

This recipe can be easily doubled or tripled! To increase carbohydrate content, use syrup/ jam, and fresh fruit on top!
