Chocolate Teff Pancake
Makes 1 medium sized pancake
Ingredients:
Dry
- ¼ cup teff flour 
- ½ tsp baking soda 
- 1 tsp cocoa powder 
- ½ tsp cinnamon 
- Dash of salt 
- Optional (for higher protein) 1 Tbsp protein powder of choice 
Wet
- 1 egg OR 1 Tbsp ground flax mixed with 2 Tbsp water 
- ¼ cup milk of choice or yogurt 
- If using protein powder, add 1-2 extra Tbsp milk or yogurt 
Mix ins
- Banana slices (~½ for 1 pancake, suggest using the other half on top!) 
- ~1 Tbsp dark chocolate chips 
Directions
- Mix wet ingredients well 
- In a separate bowl, mix dry ingredients 
- Combine and add mix ins; add another Tbsp milk or yogurt if needed 
- On non stick pan, oil or butter, heat to medium 
- Put entire mixture and flip once bubbles start to form 
- Spread with peanut butter and add any other toppings of choice 
Topping Ideas:
- Peanut butter (regular or reconstituted powdered peanut butter) 
- More banana, fresh strawberries or raspberries 
- Syrup or jam 
- Pecans or walnuts 
Notes:
This recipe can be easily doubled or tripled! To increase carbohydrate content, use syrup/ jam, and fresh fruit on top!
