Beet Chia Energy Balls

These are quick and easy to make, but do require you to get your hands messy! 

Makes 24 balls 

Ingredients: 

  • ¼  cup + 2 Tbsp beet root powder* 

  • ¼ cup chia seeds 

  • ½ cup + 2 Tbsp raw honey

  • ½ cup + 2 Tbsp nut butter of choice* 

  • 3 cups brown rice puffs (cereal) 

  • Optional, dash of salt 

Directions: 

  1. In a medium bowl mix, stir together the first 4 ingredients- the beet root powder through nut butter. It will turn into a thick paste!

  2. Add in the rice puff and dash of salt (if using), keep stirring, it will be very thick! 

  3. Now is when you will get your hands messy (consider lightly oiling them). With your hands, mash the mixture together. Grab about 2 Tbsp worth of the mix and squeeze and shape it into balls. It will seem crumbly, but it will hold its form once you squeeze it into its shape. I aim for about the size of cookie dough balls. 

  4. Do this until all the mix is formed into balls, you should get ~24 balls from this mix

  5. Store in the fridge to prevent the oils in the nut butters from separating. 

Notes:

*For beet root powder, I buy mine on BulkSupplements.com since they seem to have the best prices on this item, otherwise pursue Amazon and see what other companies sell it!

*I have tried this recipe with peanut butter and almond butter, but it should work just the same with any other nut butter (cashew, pecan) or Sunbutter (great if you have a nut allergy)
